Freedom of the Seas and Liberty of the Seas sail western caribbean year round (and eastern depending on the week). Carnival is cheap but food is bad, ships are crummy. It depends on what you are looking for. Carnival tends to be more of a party cruise, and if you like that, then maybe it is best. My personal opinion is that Royal Caribbean is best overall. They cost more than Carnival, but there is so much more to do on them, besides partying, and the ships are much nicer. Each cruise company has a slightly different "personality" -- formal and traditional or very informal or inbetween -- and attracts different types of passengers -- families, couples, retired folks, party-hearty singles.
